During my internship at Komfo Anokye Teaching Hospital, I was actively involved in the nutritional and clinical management of pregnant women with type 1 diabetes and gestational diabetes. My responsibilities included dietary counseling, planning individualized meal patterns, guiding carbohydrate distribution, and monitoring blood glucose trends in collaboration with the medical team.
Most patients with gestational diabetes achieved normal blood glucose levels within 1–2 weeks through dietary modification and regular monitoring. In contrast, the patient with type 1 diabetes (post-parturition) experienced fluctuating blood glucose values—ranging from hypoglycemia to hyperglycemia—before stabilization. Due to both clinical and personal factors, it took approximately 3 weeks and 5 days for her glucose levels to reach a stable, normal range.
I also managed adult patients across the intensive care unit, medical, surgical, and outpatient departments. This included providing nutritional care for stroke patients with diabetes, as well as outpatients with conditions such as diabetes, hypertension, and peptic ulcer disease. In the surgical wards, I supported post-operative patients, including those with colostomies, and administered specialized diets such as fluid diets via nasogastric (NG) tubes. Most of these patients showed good recovery and clinical improvement during my care.

During my rotation in the Pediatrics Ward, I was responsible for preparing and administering therapeutic feeds (F-75, F-100, and ReSoMal) for infants with severe acute malnutrition (SAM), many of whom also had underlying conditions such as cerebral palsy and HIV/AIDS. Out of six infants managed, five showed significant weight gain, progressing from SAM to moderate acute malnutrition (MAM) within about two months. With continued monitoring and nutritional rehabilitation, they achieved healthier weight-for-age after approximately four months of follow-up.
I also provided nutritional support to seven pediatric burn patients. By the end of my two-month rotation, five had clinically recovered, while the remaining two showed good improvement but were later transferred to other wards for management of associated medical conditions.
